When Jill McKillop, executive chef of LegenDerry’s award-winning Walled City Brewery, learnt that a large amount of spent grain was left over every month from the brewing process, she devised this scrumptious, sustainable solution. Instead of ending its life as animal feed or in compost, this high-protein, high-fibre, nutrient-rich ingredient, whose sugar is removed during brewing, is now transformed into mouth-watering granolas. Jill – whose brother, James Huey, is brewer and owner of Walled City Brewery – has even developed a savoury spiced granola which can be scattered on salads, soups or pates.
The winning recipe behind Grainola Goddess? Painstaking research (from perfecting flavour combinations to finding the ideal drying temperature), a lifelong fascination with food, passed down from Jill’s mother, and lashings of LegenDerry passion. “We have so much history here, our historic walls, the Donegal hills in the distance, plus great meat, seafood and local produce to draw from,” says Jill. “And the people are just so friendly.
