Just like fine wines, shellfish from different regions will have their own unique flavour and character. For Foyle Bia Mara, there are few varieties as special, or as tasty, as the oysters and mussels found in Lough Foyle.
A family-run business, Foyle Bia Mara has exported its shellfish to French connoisseurs for decades. Now, it delivers its fresh, sustainably grown and hand-selected produce to customers on native shores too.
Inside each shellfish’s robust, hard shell (the result of being tumbled by the Atlantic Ocean and River Foyle’s freshwater tides on a daily basis), you’ll find firm, subtly sweet meat with a mild salty brine. Thanks to that robust exterior, the oysters and mussels are also packed with vital nutrients.
“Our shellfish is the product of the very body of water that flows through, and connects, our communities,” says company director Catherine McGuinness. “It creates a flavour that you’ll find nowhere else in the world, a flavour that is unique to the Foyle.”
