Redgate Cider
Every apple that goes into a bottle of Redgate Cider has been handpicked from Gordon Chambers’ six-acre orchard in Lismacarol, just a few miles outside the city. From there, they’re washed, pressed and fermented before being aged for seven months to allow the flavour to develop. As well as his carefully selected cider apples, Gordon adds cooking and dessert apples to achieve just the right blend of sharpness and sweetness. The result? A medium dry, full-bodied, small batch cider with no preservatives or additives (and delicious paired with pork). What began as a pastime has blossomed a fully-fledged passion. “Some people play golf. I make cider,” says Gordon
